Let's be honest - Thanksgiving turkey is everyone's least favorite Thanksgiving dish. BUT it's high in protein and very good for you.

Every year when I have leftover turkey I make a big pot of White Turkey Chili. It's a similar recipe to White Chicken Chili, but with, you guessed it, turkey instead. Adding your leftover turkey to soup makes it flavorful + way less dry than the standard T giving dish.

Ingredients

  • 2 tablespoons olive oil
  • 1 red onion - diced
  • 1 jalapeño pepper - diced
  • 1 red pepper - diced
  • 2 garlic cloves - minced
  • 1 tablespoon ground cumin
  • 1 tablespoon chili power
  • 1 tsp cayenne
  • 1 tsp paprika
  • 1 tsp salt + pepper each
  • 2 cups chicken or turkey bone broth
  • 2 (15-ounce) cans cooked white beans drained
  • 1 (15-ounce) can cooked black beans drained
  • 1 (15-ounce) can unsweetened corn drained
  • 2 pounds leftover turkey meat (or however much you have left, add chicken if you need more meat or cut recipe in 1/2)
  • A handful of cilantro leaves
  • Lime wedges, avocado, cilantro, + cotija cheese for serving

Instructions:

  1. Heat oil in a large Dutch oven or saucepan for about 2-3 minutes. Add the peppers, onions, and garlic and cook over medium heat for 5 minutes.
  2. Add the spices, stir, and let simmer for another 5 minutes.
  3. Add the bone broth, beans, corn, and turkey. Stir and leave to simmer for 5-10 minutes.
  4. Serve into bowls + top with cilantro, avocado, sliced jalapeños, cheese, + lime juice of choice. Enjoy!!!
